Edgar Payne is a great inspirational painter, creating amazing compositions (he wrote a book containing many thumbnail compositions). I enjoy his paintings of the American west (mountains and seascapes). But a fantastic and unexpected treasure in the book as presented by Scott Shields, were the photographs and paintings by Payne in northern France of boats I have lived in France for a year, observed much of the country, and examined many paintings, but in my opinion, no harbour or channel image matches the ability of Payne. Payne's ability to capture boats navigating the water is as skillful as Monet's paintings of train stations and locomotives. In Shield's book, he presents photographs and how Payne translates these images into paintings. I found this fascinating to examine. Before Payne, J.M.W.Tunrer was considered a master of boats and waves. And am sure there are many more that I am not aware of, because of my limited and amateur knowledge. But having sketched boats in Angers, France, boats along the Loire River, and along the coast near St. Malo, I can appreciate the challenge of composition and the difficulty of capturing waves and boats in motion. One time in China, along the Li River in Guangxi Province, I started to draw a bamboo boat, as I drew, the owner walked on board, started the motor, and drove away. I finished the sketch as best as I could. Another day, I took a bamboo boat down the Li River, drawing other boats and riverscapes as I went. These were fantastic instructional experiences. It is clear to see that wherever Edgar Payne travelled he could find opportunities to learn, explore, and express. In art school, much of the time drawing in the studio is spent upon gesture and motion. Payne's ability to depict boats on water may be due partially to his ability to capture the gesture of objects in motion, illustrated by his American west paintings of riders and pack horses and seascapes of ocean waves. Painting horses and riders is not easy, as beginners often find that their living subjects seem more like stone and statues and their compositions simplistic. At sea moving boats, or on hills with moving animals, they are often not exactly in the same perspective, and it is easy to present them in a way where even the public can sense something is not correct about the image. However, Edgar Payne seems to handle this easily. With water in France, he conveys the waves without getting obsessed with the intricate details concerning the reflections and waves in the water (as he did along the American west coast). So while the book features much of Payne's images of the American west, his studies, photographs, and paintings in northern France, are exceptional. I enjoyed Scott Shields' presentation concerning the breadth of Payne's efforts. I encourage enthusiasts to sketch and paint at zoos and along lakes and rivers, making interesting compositions and capturing the gesture of movement. The goal is not always to be successful at creating a masterpiece, but rather to observe, learn, and try. Edgar Payne sets the inspiration and example. I believe that studying Edgar Payne through Scott Shields' book can be very instructive. If one is a linear thinker, Payne's work may still be a mystery. But if one is intuitive and can connect the dots, Payne's work presents the possibilities. This book is much more than a coffee table book filled with pages of great paintings. This book is about how to see, what to feature, and how to express the subject. This book is a treasure. I found the book to be much more helpful than many books about how to draw and paint. I now show this book to anyone interested in painting and drawing who will tolerate listening to me and enduring my long explanations.

I have been an Edgar Payne enthusiast ever since art school and that was decades ago. This book defines what so many feel and think of his works. And for the purchase price, not only do you get a great biography of the man but also full color and full page illustrations. I own an Edgar Payne drawing and if I had the money available I'd also have an original Edgar Payne painting hanging in my home. This book is well worth the money and to me Payne defines what Southern California landscape painting is and should be!Enough with this modernist attitude of art for art's sake and I agree with Payne on that subject wholeheartedly! BUY THE BOOK!

I bought this book because I am studying how to improve my landscape and seascape paintings. I am thrilled with this book. This will be one of my treasured art books. I have not read it yet but the color images of Paynes work is beautifully documented with clear beautiful photos of his work through out. The pages are printed on high quality paper and the size of the paintings fill up the page. No tiny photos of the paintings here. It is an awesome book and I would highly recommend it. Money well spent!

This book has the best full color plates from which the fledgling artist can see the expression and brushstrokes that made Payne such a prolific and successful painter. The historical perspective was well defined and gives a glimpse of the pioneer spirit of this early western artist and his wife, who was also an extremely talented artist in her own right. Payne's California Sierra landscapes are particularly poignant in that they give a glimpse to the reason why so many people have been drawn to the spectacular variety of scenery of California. I bought this book as a compliment to Payne's 'Composition of Outdoor Painting,' which is the definitive book for outdoor painters.

OK, so I have been burned by blindly ordering books on artists in the past...Because let's be honest, you don't buy a $50 book for the words. And many end up being mostly that.I'm writing this, my first book review, because I want you to know that this book is top notch and beautiful, full of full page pieces. It is in the top 5 of my whole library...If you are in the studio, and need a quick pick me up, this is one to grab... cheers!

Not just a wonderful classic (which it is), but also a book to teach those of us who paint landscapes, particularly landscapes of the west. Oh, and the biographical information is nice, too!

I love this book... But I haven't read it. I'm a landscape painter, so this rating is not for the text. Its not an instuctional book, its a biography (I think...ive only scanned it)This book is great because its filled with large, full color, good quality images. You can see the brushwork in the paintings. It's a thick book too. It doesn't have the close up detail images, but you can see so much in the other ones I didn't miss those.It also is separated by the locations he was painting in conjunction with his career, which I liked.

Edgar Payne captured the grandeur of the West, the sunlight and shadow, the size of the place and the smallness of man in the landscape. He also did it so simply that it looks easy....but it isn't. As a landscape painter, this book is one of my favorites and also most helpful in terms of brush technique, composition, and color choice. The book doesn't tell you how he did his magic, but a magnifying glass is all you need. This book will transport you to a wonderful place and another time.

I purchased this book because I took freestyle canoe classes with one of the authors, Anne McCrary Sullivan, this March. I just wanted to add her book to my library. When I got the book I was totally impressed. The organization and detail defy description. This is not an easy reading armchair book. This is a detailed textbook. It provides all the information you would need on outfitting for Everglade paddles, including links to outfitters, checklists, etc. It then gives detailed descriptions and maps on all of the available campsites and landing. An invaluable tool if you are considering paddling the Everglades.

If you are planning on making this trip this book is a must have. It is packed full of useful information and good advice. A good planning guide.I strongly recommend this book to anyone who is planning this great adventure.

An excellent book covering all aspects of paddling the Wilderness Waterway.The writing style is always informative and keeps the reader's interest. Being somewhat familiar with the Wilderness Waterway, from having made one north to south transit, I expected to scan the references to places of special interest to me and leave the rest for use as needed. Instead I found myself drawn to read each entry until suddenly I had finished the book. And, having read the book, I realize how much more there is to experience along the Wilderness Waterway. Their reports stir the imagination.The course instructions will be invaluable as you paddle. Their route descriptions ingeniously couple specific guideposts for either a north or south approach on the same page. Things always look different from the other direction. Along with the ever present charts and GPS coordinates, their notes resolve the confusions you are likely to encounter and get you to your intended destination.The book is presented in sections, making for easy reference whether you seek information on route, camp site, park life, technical preparation, or even the assistance of related businesses. They cover it all in detail.And, through it all, wafting off the pages, is an unmistakable affection for the place. A wealth of information is shared to make the journey safe and comfortable. This is my second CLEP guide from REA (US history to 1877 being the first), and I had no problems with it. I read the book in three days, took all the tests, and passed with a 62 the next week. The book has a much better flow to it than the US history to 1877 book did, and is far easier to follow through the context it delivers. If you need to take both the US history to 1877 CLEP and the American Government CLEP, definitely begin with the history CLEP as there is a ton of bleed-over into American Government.As far as the negatives mentioned by the other reviewers, there are a few minor editing errors, but nothing truly distracting. The author hints at his own bias, but not overtly, and not in a way that leads him to neglect covering both sides of the issues discussed. These are insignificant issues, and should not persuade you away from this well-written book.

I bought this book based on the prior reviews. Read it cover to cover twice, then read it again and took notes. Took the practice tests in the back, as well as some other free tests from petersons.com. I passed the CLEP with a score of 65. It takes some work and some motivation, but the test is definitely passable with the help of this book and the practice tests

I solely used this book (CLEP® American Government Book + Online (CLEP Test Preparation) 2nd Edition) to study for the American Government CLEP. I read this book for a few hours every night over the course of a week. I also took the online and in-book practice tests after completely reading the book to focus where I needed additional studying. I took the CLEP test and passed with a 65 (a score of 50 is considered passing and is graded on a 20-80 scale). This book did a good job of preparing me for the test overall by covering pertinent topics that were on the exam without going too much into detail about non-pertinent issues. Highly recommend this book!

Without any prior education about the USA Government I used this book as a guide to study for the CLEP. Within 3 weeks I took the exam after studying and using the online tests and other online reseach. I passed the exam!!!I would even recommend this book to anyone wanting to learn about the US government and how it functions. The author used examples of actual events to explain the concepts Which made it very easy to understand the concepts.I have 2 more CLEPs to take and I am definitely using the REA books.

This is totally worth it. I got this book and i literally spent two weeks studying for the exam by reading it before i went to bed at night, and doing the practice tests on the weekend. I got a 64/80 using this and a few videos on YouTube to refresh my knowledge on the amendments. Make sure you go over the practice test and read all the answers and reason's why the other choices weren't the right one. Ordering the CLEP History 1 textbook from REA!!

This book and the exam guide on the CLEP site were all I used. I read the book, took all the practice test and went over the questions I got wrong and then reread the book all in a three day period, and passed on the first try. There wasn't anything on my test that wasn't covered by the book.

I had to take the Exam earlier than I had planned too. With the basic knowledge of a 40 year old and 5 days to cram with this book plus the online practice tests I got a passing score of 69. Only 4 stars cause the practice test questions had repeat questions that weren’t on my real test and the real test had lots of questions not on the practice test but found in the reading.

This book was great. I have been trying to work through my degree as quickly as possible and studying for this test helped take some time off of my degree. Great way to earn college credit! Be warned - the practice tests are easier than the real test, I made sure to have a 75% passing rate on the practice tests before I went in.

Fantastic book. This was the second book I received that covers building drones. My first book I thought was great, this book is far better getting into more details about all of the necessary hardware and software. This book also details how to build a drone for photography, mini drone, and a fixed wing drone. This book describes how to use different different specs of the multiple options for drone use. I highly recommend this book for anyone that is interested in learning the anatomy of drones, and how to implement different options. I have built my own drone prior to receiving this book and it provided a different (valuable) perspective, as well as clarified questions I developed about components that I wasn't completely familiar with.

The book was given to me when I was a director of the Board of the American Psychiatric Foundation and I bought the Kindle edition to have it with me at all times. It's one of those books that you will enjoy and learn more in re-reads.

This is a great book for grant writers and very well priced for the electronic version. Its easy to search the book to find the chapters. Very pleased with this pruchase.

Many studies of the modern economic world spend much time and text on corporations, exchanges, markets, consumer trends, unions, and government bureaucracies. However, these studies often neglect the non-profit or not-for-profit Foundation. This is unfortunate as many of the biggest changes in human society over the past 100 years were driven by money from foundations. Maybe the lack of attention is due to the fact that foundations are a major force only in the United States of America. In all other countries, those with wealth also take on political power, or those in politics use their power to accumulate wealth. Here in the USA, the separation of powers woven into the US Constitution has made it politically difficult and socially unacceptable for the visible combination of political and economic power. And so the ultra-rich have created foundations to influence political decisions and society in ways that are ungoverned by our Constitution.This book is authored by someone who has worked closely with foundations, and so the text itself is quite friendly towards the history of American foundations. The chapters of the book describe how foundations work, how they originated, how they get their funding, how they distribute their largess, and what has been the public's reaction to their existence and actions. The text provides examples from many of the more famous foundations, such as the Gates, Carnegie, MacArthur, and Ford foundations.The book also describes some of the failings, such as wasted money, controversial goals, bad publicity campaigns and the like. However, these failings are kept to a minimum. For example, the support that the Rockefeller family and others gave to the Nazis via their foundations is covered in just under a page. This brevity is unfortunate, as the eugenics movement did not originate in Germany or anywhere in Central Europe. It originated in England during the time of Darwin, was transferred over to the USA where it became gospel for many of the leading figures of early 20th century America, such as Henry Ford, Prescott Bush, the Dulles brothers, along with the Rockefeller family. And it was from the USA that eugenics was then transferred back to a prostrate Germany to accept via the vehicle of the Nazis, a political party brought to power by Anglo-American money. For a better understanding of what foundations can do to a society, I recommend the works of William F. Engdahl, Anthony Sutton and Edwin Black to begin with. All write in the English language, though the former is American, the 2nd author is British and the last author is Jewish.Edwin Black's most recent publication, Financing the Flames, really shows the pervasive effects of foundations and their money, especially in foreign affairs. Overall, my reading of this book is that it is too optimistic and too sympathetic towards the power and influence of foundations. Hence the 3 out of 5 stars.

Foundations are a subset of Non-Profit organizations that have become surprisingly big busines in the United States. Somewhere around 1/7th of the business in the country is conducted by these organizations. Somewhere around 1/9th of the workforce is employed by one. They have become an integral part of the American economy.In this book Mr. Fleishman looks at Foundations (a number of which he has been associated as employee, trustee or some other capacity). He examines what makes a foundation successful, and how some have failed. He offers insight and advice on how to make a foundation more successful, and at the same time how foundations should have an obligation to become more accountable since they received special tax considerations from the Government. He suggests that this accountability should be done by the foundations voluntarily. However, Mr. Fleishman is an attorney and believes that if voluntary response is not forthcoming then new legal requirements should be placed upon them to require more openness.

Adrian Tomine was born in 1974 in Sacramento, California. He began self-publishing his comic book series Optic Nerve. Adrian Tomine is the master of the "Slice Of Life" stories and here are six recent stories collected together in a very handsome hardcover. It has a sewn binding with quality paper. The book cover is clear plastic with only the title on it. A very creative package.Five of these stories are from Tomine's magazine Optic Nerve (issues #12 to #14). The sixth from Kramers Ergot #7 has been retitled and changed from it's original appearance.The lead story A Brief History Of The Art Of "Hortisculpture" is a story about a man and his dumb invention. Tomine structures this story to look like a newspaper strip. You get six black and white daily strips followed by a large full page color strip. The theme of trying to say something to a loved one about their life's dream which you know is totally unrealistic is something we have all experienced.Alice Sweet the next story is the one from Kramers Egot. It is about a girl who finds out she looks just like a famous "Porn Star". This one is beautifully illustrated by Adrian Tomine in full color and wide open panels.Go Owls is a heartbreaker about a girl who settles in a relationship mainly because she has no other place to live.Translated , from the Japanese is very traditional little story told in a very untraditional format. It is a story of a mother and her young child reconnecting with the father. It is very ground breaking in that Tomine never once depicts any of these three characters or the man she meets on the airplane at all.Killing and Dying is the title story about an untalented fourteen year old girl who wants to be a comedian, meanwhile something very tragic is going on in the background. The story is told in postage stamp size 20 panel grid. This is a powerful and poignant tale which will break your heart.Intruders the final story I found very disturbing. It is told from a first person narrative and it is very easy to identity with the protagonist until you figure out there is something disturbingly wrong about him.Tomine is a master storyteller and these stories will touch your heart and your head.My Highest Recommendation.

First off, Stephen Vincent Kempton has written a perfect review of this book for Amazon. Go read that.This is a collection of 6 stories, all of which may (but not assuredly) are set in Los Angeles.1) A middle aged man invents something that is neither popular nor useful. His wife is supportive. The highlight of the story is the relationship between the married couple, how it is effected and how they communicate.2) A young woman experiences school, and relationship problems because she looks like an internet porn star.3) Two people meet at an AA meeting and drink and fall into a relationship.4) A Japanese woman and her daughter return to America to see the father. The couple is not getting back together. We never see any of the characters.5) An awkward, stuttering teen wants to become a comic. Her cancer-ridden mother is supportive while her father is skeptical.6) A vet with PTSD returns home and ruminates on his former home and marriage.These are stories of connection, and how many people have little to no connections. Even when connections are made, they can be strange, stilted or have little foundation. Several poignant moments.

Tomine is a Master of Story; he takes you into a world and keeps you their until the end. When looking at the flaws in Tomine characters you can't help but self reflect and ask yourself, "can that become me or is it me in some way"? If the answer is yes, try to figure that out...if the answer is 'no' , you may be lying to yourself. Look for any Optic Nerve comics or other work by Adrian Tomine. I started with Optic Nerve #14 and ever since then I can't find enough of his work. I also recommend writing Tomine in old style letter format to thank him for his creativity and encourage him to do more! Enjoy

I put off reading this for far too long, but I am so glad I finally sat down and got through it. Below is a holistic, one-paragraph review followed by my brief takes on each of the stories in the book, in case you aren't sold. I won't go into specifics, but if you're genuinely interested in the book, it may be best to not take the chance of spoiling it.This is my first go reading Tomine's stuff, and damn if I'm not impressed. From the outside, the book is beautiful. Evocative cover art, and the clear dust cover is a nice touch (though I will say it can be easily scuffed, but no worries). The paper quality is very good, to the degree that there were a couple instances where I thought maybe I had got two pages at once but hadn't. Each story in this collection is different - everything from the subject matter and characters to the lettering and the visual style shows how much care is put into telling these tales. I'd be lying if I didn't say the book could be draining at times - some stories, one in particular, leave you feeling empty, while others have a much more hopeful turn than you would expect. There's such a range of emotions conveyed in such nuanced ways - lots of subtext and unspoken events unfold during these stories, showing how carefully they were put together. Personally, I'm excited to see more of his work.~'A Brief History of the Art of Hortisculpture' is formatted like a weekly strip - I thought it was fantastic to frame the tumultuous home life depicted in the story within a format commonly associated with (generally upbeat) family-centric strips while also implying a passage of time (the story unfolds over roughly six years). Tomine highlights the pain on both sides of a marriage wherein one partner is caught in a fruitless obsession, following his muse under the water and drowning his family in his stubborn self-affirmation. Through the story, you can almost feel the ending creeping up like a foregone conclusion, an inevitability - something has got to give.'Amber Sweet' deals with the struggle to find identity and a sense of self when others see it differently. The main character has a famous doppleganger, but it doesn't help her in public- not like a, 'hey, you look like Matt Damon!' - and drastically changes her quality of life in her late teens/early 20's. The story follows her as she recounts her life falling apart and her attempts to put it back together - almost venting, getting it off her chest - with enough openness to wonder if she's on an upswing or another fall to pieces. The full-color works beautifully ('Hortisculpture' works in green tones, with occasional color), and the transition to larger panels works well for the story.'Go Owls' is probably one of the hardest-hitting in the collection, an examination of a relationship that feels more like the anecdote of the frog being boiled alive so slowly it doesn't realize it than a relationship. The main character meets an older man at an AA meeting and suddenly seems to be the background character, completely overshadowed by the man that bonded with her over addiction and baseball. At times, it seems okay, that it's getting better, but the feeling of being trapped comes across so realistically that the reader feels it too. Heartbreaking.'Translated, from the Japanese' is probably my favorite of the bunch. It's only seven pages, spread across large panels and narrated in what amounts to maybe a couple paragraphs of text, and not once are any of the characters seen directly, but the power in the story is undeniable. By focusing the full-color art on the settings, locations, objects, and everything around the characters, the reader takes the journey with them and the story somehow becomes even more universal. I absolutely loved this one.'Killing and Dying' follows a family of three dealing with expectations and aspirations on the surface, and something unspoken and devastating between the lines (watch the art in the background). Where is the line between support and protection, when does a parent stop or allow their child to experience failure, and what matters more? The characters here are as flawed as they are relatable, and it's the perfect portrait of a family trying so hard to be together and to be there for one another. The format changes again here, with small, gridlike panels.'Intruders' closes out the collection in stark black and white, and is definitely up there in the running for darkest of the bunch. A veteran tries to return to his old life first in normal ways, but then they turn more sinister. There's a lot of moral crisis in this one, and in a way the main character deserves pity for most of it, but it's somewhat unclear if by the end the events he put himself into changed him for the better.Again, this is a fantastic set of stories and I look forward to reading more from Tomine for sure.

This is not a BOOK but a fold over, laminated pamplet. Contains a page on invertebrates pictures, 2 pages on fishes, 1 page on reptiles and amphibians, 3 on birds and 3 on mammals. The scientific name and the size of the animal is all the information that is listed. I was expecting some descripton that would help distinguish an organism from other similar ones. I was surprised that neither the carp nor the alewife was included.

all the animals in that book were overweight. it made me hungry.

I wish you'd written more, Chef! Your stories and story yelling ability deserve more than appetizer status - I want a book of just the full meal deal stories!

Saw this book several months ago when it first came out. I passed it by because I saw "Smoke" and "New Southern Kitchen": My mind immediately turned to barbecue and Deep South Gulf Coast recipes. Living down below Houston, I don't need another "new" attitude towards cooking Texas- or Louisiana-style dishes. But when I saw it available at my local library, I decided to get on the waiting list for it. I've had it for a few weeks now and I'm very excited by the recipes I've tried and those that I've marked. Boy, what a fool I've been! Oh, what I've been missing! I can't avoid it; I am ordering my own copy of this book. (And I think the cover of this book is a bit misleading--I'm not sure where "Smoke" comes in...)As I state in the title of my review, the ingredient lists are way, way long. But--for once--I don't care how long they are. The many ingredients allow for a complexity of flavor that I don't often see in "do-able" recipes. Assembling ingredients is probably the most difficult and time-consuming part of these recipes. And that's not a terrible thing, is it? By "do-able"--and I like "do-able"--I mean recipes that don't take hours and hours to build; recipes that don't break the bank, and recipes where the instructions don't cause my heart to flutter with anxiety (over intricacy issues) or consternation (over unclear directions).And, I usually shy away from cookbooks written by restaurant chefs, but this time I don't care about that either. The dishes that Chef Lee has created for this book are outstanding and he is not overbearing.There are incredible recipes in this book. The ingredient combinations tie together and overlap; they blossom and bloom into some awesome and unique taste experiences and take on and highlight the best of many cultures: His Korean heritage and his Grandmother's cooking, the places near his old neighborhood (where he was told not to venture when he was a youngster), his experience working in New York and the dishes learned from his friends and co-workers, his adopted home in Louisville, Kentucky and the artisan farms, craftsmen and distilleries of neighboring counties and states.You can STOP READING HERE if you are short on time, as I hope I've conveyed to you that this book is well-worth buying. But if you want more info and input from me, keep on reading: I like to write and I love this book.The recipes incorporate so many main ingredients and flavors that appeal to me: There is an entire chapter dedicated to lamb; there is a chapter on pickles (near and dear to my heart); there are Asian flavors and my favorite booze, bourbon; there is country ham. He uses miso, rice, citrus, soy sauce, peppers, mayo and cola. Then, of course there is a chapter of beef, pork, fowl (chicken, turkey, game birds) and well-loved Southern veggies.Do you like to make quick pickles? I sure do! Included are some interesting combinations that I've not run across before: Pineapple and jicama, caraway (instead of dill) to flavor cuke slices, Bourbon-Pickled Jalapenos (and I think mine turned out prettier than his because I used both red and green peppers), jasmine tea and star anise with peaches, grape halves with chai tea, coffee beans with beets and cherries with rosemary. There are also four seasonal recipes for kimchi. I like to make kimchi; it's not hard to do, just a bit time-consuming and a waiting period for the fermentation process. UPDATE, Aug. 2013: The simple caraway seed and cuke pickle is the best quick pickled cuke that I've ever tasted. I've made two batches already. The peach pickle is wonderful and the pickle juice is so versatile I've been using as a secret ingredient in savory dishes. The grape pickle is tart and brings contrast to a dish. I've used it successfully in a tomato salad, of all things. I can't pick up the bourbon flavor in the jalapeno pickle and I thinking through how I can rectify that. Bottom line, at this point in time: The pickle recipes are keepers!There is a complex "master" remoulade sauce that runs through many recipes in the book with a little of this and that added to compliment the dish--sometimes it's miso that is added, or maybe corn and chili powder, or kimchi.Here are favorite recipes; some I've made, some are on the bucket list:--The Vietnamese Lamb Chops (honey, bourbon, fish sauce, lime and more in the marinade) is super. (I grilled them; he roasts them.)--There is a fabulous meatloaf flavored with cola and bourbon that he's combined with a pepper gravy and a sunny-side up egg on an open sandwich.--He's made a ham pho that is less complex than the traditional beef pho.--I grew up with pork ribs and sauerkraut, but Lee cooks it in such a way that he takes the simple dish over the top, and then he tops it with a horseradish cream. I may never make my old recipe again.--He's got recipes incorporating country hams and a recipe for a tamarind-strawberry glazed "city" ham.--There is a somewhat simple Poached Grouper that is heavenly.--And, talking fish recipes: My favorite recipe in the book is this one: Panfried catfish; the fillets are not breaded, just fried in butter and oil in a skillet. But it's the vinaigrette that sends me: Red seedless grapes crushed in the blender and combined with bacon, thyme, vinegar and mustard; simply beautiful.--He's made a rhubarb mignonette for raw oysters, and a bourbon brown butter for baked oysters.--His idea for curing strawberries in salt and sugar sparks my imagination.--I've made the Braised Bacon Rice and it is mighty fine.--And his Bourbon-Ginger-Glazed Carrots is destined for my Thanksgiving table.--Because my husband doesn't much care for buttermilk, I halved the Buttermilk soup recipe and ate it all myself: Chilled, with maple syrup and tangerine juice, then topped with bourbon-soaked cherries.--And, a recipe we didn't like: His pimento cheese. We like pickle in ours.There are braised dishes: Short ribs; brisket with cinnamon, paprika, stout, bourbon and peach preserves; turkey legs with sorghum, cider and fresh sage; Cola Ham Hocks; a pork shoulder with Black BBQ Sauce, and lamb shoulder with bittersweet chocolate. He uses ground meats, too: Piggy Burgers with hoisin sauce and a sun-dried tomato ketchup with brown sugar and soy sauce; a rice bowl with lamb and fresh herbs, and an Asian-flavored chicken sausage to work with an orange-flavored miso remoulade in a rice bowl.There are essays scattered throughout the book. He talks about a local soy sauce, his favorite fish sauce (from Vietnam), country hams, frying at home, miso, sorghum, buttermilk, goat cheese and (of course) bourbon.Plus he talks about himself and his escapades and his life experiences. Together the words present a very personable and likable guy--one with a responsible attitude, inquisitiveness and sensitivity. Seems like he likes to drink and party and have fun, too.The pictures are excellent and interesting, the Resources section is enlightening and very helpful, and the index works very well with the recipes and the way the book is put together.I'm done. Sorry it took so many words. I guess I really like this book, and Chef Lee, and his creations.

I'm a grandmother and I've lived my entire life in the Deep South. I grew up on grits, biscuits, and BBQ. The last few years, I've taken an interest in various Asian cuisines, especially Korean foods such as kimchi. I would have never imagined that typical southern cuisine could be fused with Korean influences and result in such unique and bold flavors. Just reading this cookbook makes my mouth water.I usually skip long text in cookbooks, and go straight to the recipes. Not so in this case. For example, I very much enjoyed learning how Lee watched his grandmother making kimchi when he was a child, and the lessons he learned along the way. Every story he shares is interesting and often emotional. It brings a lot to the recipes that follow.While many of the recipes are complex, and well worth the time and effort, some of the simpler recipes are equally full of flavor. Roasted oysters are topped with a simple butter and bourbon sauce, and the results are mouthwatering!I love the way Lee has merged the two cuisines in unexpected ways. For example, in Korea it's common to take several ingredients and roll them up into little lettuce wraps. Here, Lee wraps lettuce around southern cornmeal fried oysters and country ham, and dabs it with a little caviar mayo. It's simple, but elegant and delicious.My favorite chapter must be Pickles and Matrimony. I found wonderful recipes for kimchi, as expected, but I also found pickled grapes with chai tea, pickled beets with coffee, and pickled cherries with rosemary. Each recipe is unique and builds upon layers of flavors in the most unexpected ways.I love everything that I've tried so far, and I'm not finished yet! Other than seafood, I don't eat meat. I was able to take some of Lee's recipes and convert them to tofu and tempeh with delicious results. The interesting combinations of ingredients in this cookbook have helped me to become more adventurous in my own kitchen. I really love this cookbook.

I hope I get a chance to meet Edward Lee someday and thank him for his work. I've never eaten at his restaurant (would like to do that, too) but we share a lot of common favorite foods (kimchi, grits, bourbon, rice with toasted edges, and various bits of pigs) and I've had many a feast reading his insightful words. Chef Lee's inclusive observations on food, cultural intersections, human compassion and keeping tradition alive by making new things have made me cry more than once. Hell, they've made me cry a lot. On a personal level, I'm glad that such an insightful observer not born in my culture (though I would gladly claim him as a cousin if he would let me) lets me know that the things I admire about the foodways and values of the mountain South aren't just nostalgia. On a global level, Mr. Lee's kind of thinking about human understanding and bringing it to a very big table just might be the stuff we need to save the world.

This is the second copy of smoke and pickles that I’ve purchased from Amazon. The first one has been well used and enjoyed. Ed Lee’s writing is beautiful. It’s smart and reflective and feels incredibly authentic. The recipes are great. I usually don’t follow recipes unless it’s something new or something that requires a specific recipe. That being said, I’ve cooked almost half the recipes in the book. It’s worth it just for the lamb bacon! I hope he writes another book one day!
